COUNTRY HAM SALAD
2 cups ground country ham
½ cup pickle relish
1 cup mayonnaise
Mix all ingredients together and refrigerate. Serve on bread or with crackers.
To enhance the flavor of other dishes, try adding ground country ham to omelets, quiche, scrambled eggs, soufflés, croquettes, bean dishes, macaroni casseroles, pates, green beans, black-eyed peas, salads, and pizza.
COUNTRY HAM BEAN SOUP
1 lb. dried navy beans
1 cup country ham
1 onion, chopped
Soak beans in water overnight. Pour off water. Place all ingredients in soup pot. Cover with water. Bring to a boil, then simmer until beans are tender, usually 2-3 hours.
