You say you don’t use nitrites or nitrates in your curing process. What are they?

Nitrites and nitrates are artificial food preservatives that are used to enhance the color and extend the shelf life of processed meats.  Most meats are injected with nitrites and nitrates to speed up the preparation process.  At Finchville Farms, we don’t’ rush the process by using these artificial preservatives.   Our hams achieve that beautiful color and flavor as the result of our time trusted curing process – salt, peppers, sugar and time.  It’s the way we’ve done it since 1947.
